This measure-free soup is easy, delicious, and great for your gut and overall health. It contains several superfoods including bone broth, leeks, onions, and garlic. I provide approximate measurements, but there’s really no exact amount required for anything in this recipe. How much you add of the ingredients comes down to your personal preference. That’s one of the reasons this recipe is so easy!
The other nice thing about this soup is that it can be seasoned in several different ways. If you want to maximize the health benefits, I suggest making it with the ginger and turmeric (as I describe below), but you can easily exclude both of these ingredients if you prefer. It comes out delicious both ways.

- 4-6 cups bone broth
- Olive oil
- ~ 3 leeks, sliced
- 1 onion, chopped
- Several cloves garlic, chopped
- ~ 2 - 4 cups shiitake mushrooms
- ~ 3 cups frozen cauliflower rice
- Seasoning: garlic powder, salt, and pepper
- Optional: turmeric powder and a tbsp of chopped ginger
Chop your leeks, onions, mushrooms, several cloves of garlic, and- if you’re opting to use ginger- chop your ginger as well.

Cover the bottom of a large pot with olive oil. Once the olive oil is warm, add your chopped leeks, onions, mushrooms, and ginger. Saute until soft, stirring frequently to prevent burning.
Add your chopped garlic to the pot and saute for 2 more minutes until aromatic.
Add 4-6 cups of bone broth. How much you add is dependent on how brothy vs. hearty you like your soup.
Add your seasoning (garlic powder, salt, pepper, and optional turmeric) to taste.
Bring soup to a boil and simmer covered for 10 mins.
Add your frozen cauliflower rice. Return soup to a boil and simmer for another 3-5 mins.
Remove from heat. Serve and enjoy!
